Corn Frito-Chip Salad

My Sister makes this Corn Frito-Chip Salad for parties a good bit. She is always asked for the recipe. After taking it to our Family Church's Homecoming  (the Church my Grandfather built and now my Uncle is the Pastor), once again many asked her for the recipe. Unlike me who holds close her ultimate favorite recipes and reveals my recipe flops, my sister just proudly gives her favorite ones out! Yes, I am stingy. She is not!

Anyway, I had never made the Corn Frito-Chip Salad because I didn't think anyone would like it.  Recenlty, my Mom made it for us. So, that was how I found out that the Children liked it a good bit. The only thing the Children slightly snubbed their nose at was the raw red onion so I will make it again with that ingredient at about 1/4 of a cup or even less. Other wise, I have a new cold salad recipe for those Outdoor camping trips, church or military unit parties or quick get-togethers!  Yippy!


Corn Frito-Chip Salad
2 cans corn, drained
1/2 of a red onion, chopped
1 bell pepper, chopped
2 cups shredded cheddar cheese
1 cup mayo
1 bag chili cheese fritos (crunched up)

Mix all ingredients together except for the chili cheese fritos.
Mix the fritos just before serving.

  1. I am like you, hold the family favorites close to my heart....there are some recipes that only go down the family line, they don't go across to in-laws, etc. you have to be a direct descendent to get the recipe!!!

    Your recipe sounds delicious

    On a side note, speaking of in-laws they are here unexpectedly and that is just a whole 'nother ball of wax I will tell you about later!!!

    I did recenlty give up my Aunt's cole slaw recipe. That was big for me! I was tough as nails for years about it. I bent in a moment of weakness.

    I am glad you are doing well. I was just about to slip into your blog to see if you updated any baby pictures of that new little cutie!

  4. Lisa, I get sick after I eat, popped the waist already and starting to swell. I am already feeling 8 months pregnant and I am not even 3 months along. It is looking like it will be a very crazy 1st trimester.

  7. I made this on Monday for an office lunch. Since there were 4 ladies that do not like onion or bell pepper I made one with out the onion & bell pepper and one with. They all loved it and had second helpings. So, even if you don't have the bell pepper & the red onion on hand it is still good. The chili cheese fritos are a must though :)

  9. They are just Fritos (corn chips in the potato chip aisle) Easy to find in all areas of the US.

    1. I just cut the recipe in half and made it for my husband and myself. We both loved it.

  10. I make this recipe for my husband and i , just leave the chips out, When we eat we add the chips to our individual servings. The salad will keep for a few days by just adding the chips as we get a serving.
