Amish Harvest Soup

"Only the pure in heart can make good soup." -Beethoven



While out for an afternoon drive, I stopped in at the (Amish) Country Pantry stand again. This time I picked up their Harvest Soup Mix. The mix is about 2lbs (1 1/2 cups). It is lentils, brown rice, green split peas, yellow split peas, and wild rice.

The other ingredients needed for the recipe:

4 c. water
1 c. carrots (diced or sliced)
1 c. celery and leaf (finely chopped)
1 c. shredded cabbage
1 c. diced tomatoes
1 tsp salt (According to taste)
1/4 tsp pepper (According to taste)
1 tsp. chicken broth mix (according to taste) or boullion cubes
1/2 lb cooked chicken, turkey or ground beef

1. Place water and Harvest Soup Mix in a heavy pot and simmer for 1 hour.
2. Add all other ingredietns and simmer another hour.

Options to Soup: Make with smoked sausage and add 1 cup of each fresh diced apples and sweet potatoes, instead of tomatoes. Other spices that can be added: savory, garlic and tarragon.

*My family didn't particurally like this recipe.

  3. I feel the same way...I will never picture that sweet chocolate town without you coming to mind! I will write you soon. Tonight they are at a forties swing dance dinner event put on by the seniors at the school where Paul teaches. I hope someone takes pictures of them!

  6. That looks and sound wonderful, but as the temperature has been about 80 all week until today's cold front of 70, I think soup will have to wait until the fall.

  7. Maria, I could only wish it was in the 80s! I keep getting the itching to go South to warmer climates! I would love to have a trip to Augusta or Savannah right about now! It is in the 40's here! And, it is raining. Please, Send me some of your lovely sunshine!
