Herb Rubbed Surf and Turf with Loaded Mashed Potatoes

The other day while heading into a grocery store there was a chef grilling steak and shrimp. We had just finished lunch (never going to the grocery store on an empty stomach) so I was full which was the reason why I  almost skipped the display in which he was tempting everyone with the smell.  The Children asked to have a taste, and after several  "more please" and this is so "yummy", I took a taste too.  From that point, the hunt for all the ingredients for the Steak and Shrimp recipe began! 

I didn’t grill it like the recipe called for it to be done. Instead I did the recipe on the stove just like the chef did. It was such a huge hit!
Original Recipe:  (WHAT I DID is in BROWN)
Herb Rubbed surf and turf
2 (12oz boneless beef ribeye steaks   4 small boneless beef ribey steaks
4 shrimp sqewers ( it will have about 6 shrimps on it)  1 box of Shrimp with out tales
1 oz bag fresh thyme    I did this exactly)
2 Teaspoon seasoned pepper blend   2 Tablespoons pepper blend
Olive oil     (I used it)
2 Tablespoon parsley flakes    2 Tablesppons of Parsley
 1 ½ teaspoon garlic salt   2 Tablespoon of garlic

1.       Coat steak and shrimp by pressing rub (thyme, parsley, pepper blend and garlic salt) . Discard remaining rub that has been in contact with raw meat. Coat steaks and shrimp with cooking spray
2.       Place steak (only) on grill; grill 5 minutes.
3.       Turn steaks, place shrimp on grim. Cook 2 minutes; turn shrimp and cook 1-3 minutes or until steak (medium rare) and shrimp reach 145F.
I cooked the steak in a skillet in olive oil. When I got it to medium  I added the shrimp and cooked for several minutes. By this time the steak was at a nice Medium well and the Shrimp was cooked as well. The juices and the rub mixed together nicely.

Loaded mashed potatoes
1 (24oz) package refrigerated mash potatoes    I USED REAL Potatoes
¼ cup shredded cheddar cheese    ½ cup cheddar cheese (then I added more)
¼ cup sour cream  ½  cup of sour cream
1 tablespoon cooked bacon pieces  1/3  cup of bacon bits
 1 tablespoon pre-sliced green onions
1.       Combine all ingredients in microwave –safe bowl and cover
2.       Microwave on High 2 minutes, stir and heat 2 to 3 more minutes until hot.
I am a refrigerated mashed potatoe snob! Just gross in my opinion so I used real potatoes!!!  (And, don't try to trick me I know the difference!)   I just started with the above ingredients and added more until I got the desired taste I wanted. ;) Then, I added butter because butter is good on everything!

  3. HA! No, I thought Dad was going to be the cook! ;) What happened to the Family rule? "When camping the guys cook." I am seriously getting jipped this camping trip!

  6. I'm with you on no substitues for potatoes Just not the same as the real thing. :-) This looks like a dish my husband would enjoy!
